Walnut Basil Pesto

Your whole family will fall in love with these wholesome and delicious pancakes! They are 100% nutritious and healthy, made with oatmeal, whole wheat flour, and sweet blueberries. No butter, oil, or sugar!! These pancakes have become a Sunday morning favorite in our household from the young to the old!

Ingredients:

● 2 cups Oatmeal
● 2 cups Milk (or plant based milk)
● 1 tsp White vinegar
● 1 tsp Vanilla
● 2 Eggs
● 2 tbsp Applesauce
● 2 tbsp Maple Syrup
● 1 cup Whole Wheat Flour
● 2 tsp Baking powder
● 1/2 tsp Baking Soda
● 1/2 tsp Salt
● 1 tsp Cinnamon
● 1 cup Blueberries

Instructions:

1. Pour the vinegar in the milk and then combine the oats with the milk in a medium bowl and set aside for 20 minutes.
2. Add wet ingredients to the bowl with the soaked oats and whisk until well combined.
3. Add all dry ingredients to their own bowl and combine very well, and then add the dry ingredients to the wet ingredients and fold JUST until combined (use a spatula, NOT a whisk!). Do not overmix! Or you will have dense and gummy pancakes.
4. Fold in blueberries.
5. Heat a skillet or griddle over low heat (these cook best on low heat). Spray with nonstick cooking spray and drop 3-4 tablespoons of batter per pancake on the hot surface. Cook until bubbles appear, then flip and finish until cooked through.
6. Serve with maple syrup and blueberries sprinkled on top.
