Carrot soup with miso and sesame

Recipe from SmittenKitchen.com (Jan 3, 2012). This tasty soup was shared at Jingle & Mingle by Jennifer Boylston

Jen says the following about this soup recipe that she shared for Jingle & Mingle:

Carrot is the star ingredient. I sourced the recipe here, which is, as a generality, a great source of cooking inspiration. The vegetable “broth” was made with Better than Bouillon’s Seasoned Vegetable Base. The miso was purchased at the coop but I don’t think it is as good as the miso paste I buy at the Asian grocer in Lebanon. I noticed having to add extra salt this time, I don’t usually have to do that. Tje soup is very good when served with the sesame oil and scallions, though I skipped those for this potluck. I make this soup all the time – it freezes very well, easy to grab for lunch or easy dinner when you don’t feel like cooking.
