Mexican Inspired Baked Potato

A hearty dinner with a punch of heat.


  • 2 TBSP of black beans
  • 1/2 of an avocado
  • smoked paprika
  • pepper jack cheese (or preferred cheese)
  • your favorite salsa
  • Yukon potato
  • Garlic
  • Salt & pepper (to taste)
  • Lime Juice (optional)
  • Cilantro (optional)


  1. In preparing your baked potato, use oil, salt & pepper (to taste) garlic, and smoked paprika. Bake your potato as you normally would.
  2.  When potato is finished baking, add your cheese and allow it to broil for approximately 1 minute or until cheese is a bubbly brown.
  3.  Stuff with black beans, avocado, and your favorite salsa.
  4.  Garnish with desired additional salsa and/or hot sauce. Add a spritz of lime juice and cilantro (optional)
  5.  Enjoy!
