Roasted Carrots with Za’atar, Pomegranate Seeds and Molasses

If, like me, you had several days of very filling meals with your loved ones this Thanksgiving weekend, then I’m sure you also had the opportunity to try a few new recipes. While it seems I only ate amazing food for several days, one recipe that surprised me was the combination of roast carrots and pomegranate seeds. Carrots are one of the few vegetables I enjoy eating; roasted makes them even tastier! Pomegranate seeds are little bursts of goodness in each bite. Combining them together into one dish seemed like it was the greatest idea, or an awful one. Fortunately, I was beyond pleasantly surprised when I gave this dish a try. I hope you’ll give it a taste too!
